Despite my best intentions every year, in the run-up to Christmas I always end up overindulging in sweet treats such as sugary "Vanillekipferl" biscuits and Christmas Stollen. Kaiserschmarren
An icon of Austrian cuisine, “Kaiserschmarrn” is a fluffy shredded pancake, which has its name from the Austrian Emperor, Kaiser Franz Joseph I, who was very fond of this kind of dish. To me, it’s the perfect comfort food for when I am taking a break from skiing (I am kind of a sweet tooth!). Pancakes are loved the world over, but in Tirol, we have our own recipe.
